Brewers are all too aware of the fact that beer is probably the beverage that reacts most sensitively to oxygen. What is known as the oxidation off-flavor occurs if there is too much oxygen pickup. Trend beers made using the rediscovered cold or dry hopping technique quickly alter their taste with oxygen pickup. Standard light beers are also especially sensitive to oxygen, however. Dark beers, on the other hand, often display considerable flavor tolerance to an oxygen content of above and beyond 0.1 mg/l. Brauer wissen: Bier ist wahrscheinlich das Getränk, das am empfindlichsten auf Sauerstoff reagiert. Der sogenannte Oxidationsgeschmack stellt sich bei zu hohen Sauerstoffaufnahmen ein. Trendbiere mit der wiederentdeckten Kalthopfung, früher „Hopfenstopfen“ genannt, verändern ihren Geschmack bei Sauerstoffaufnahmen recht schnell. Aber auch gewöhnliche helle Biere sind besonders sauerstoffempfindlich. Dunklere Biere zeigen dagegen oft eine beachtliche Geschmackstoleranz gegenüber Sauerstoffgehalten jenseits von 0,1 mg/l. Die Sauerstoffaufnahme bei der Bierbereitung fängt beim Schroten des Malzes an und endet noch nicht mit dem Verlassen des Bieres der Brauerei, denn Sauerstoff durchdringt beispielsweise Dichtungen von Kronkorken – bis zu dem Zeitpunkt, an dem das Bier konsumiert wird.
